Frank’s passion for food and restaurants began at an early age entering the business at 15 and later his extensive culinary training came with chefs in New York City, Boston and Colorado. Frank’s diverse experience has given him the ability to create Menu, Drink, Wine and Theme concepts that successfully push the envelope and gain the recognition of the public, his peers and the press.
Recently returning to Miami from Pittsburgh after a brief hiatus from restaurants, but not from the Food & Beverage Industry, Frank was the Chef/Owner of The Epicure’s Palate in Pittsburgh. An exclusive catering company specializing in Wine Dinners, Game Dinners and Artisnal Cocktail & Hors d’ Oeuvre Parties. The progressive concept also offered In-Home Cooking & Mixology Demonstrations, Individual and Group Culinary Instruction among other unique services. During this time Frank also consulted on a number of restaurants including acting as Opening Consultant/Chef Consultant of a casual-upscale Seafood & Crab House in Sterling VA which opened in March 2013 and Chef-Consultant for a unique Mexican Concept in Key West.
Prior to returning to Pittsburgh Frank’s menu and concept for the Urbanite Bistro in Miami received “2.5 Stars” from the Miami Herald within its first 4 months as well as being featured on Fox Television’s “Deco Drive”, NBC’s “South Florida Today” and press in Wire Magazine, Sun Post and numerous other Miami publications. As well as the critics the guests thought highly of the concept and cuisine as well voting it for 4 separate Diner’s Choice Awards on Opentable.com including “Fit For Foodies” and “Neighborhood Gem”.
Before his stretch in South Florida Frank’s previous venture the “Brass Monkey” in Brigantine, NJ received “Best of the Shore 2006” by world renowned critic Craig LaBan of the Philadelphia Inquirer, “4-stars” from the Philadelphia Courier Post, “3-stars” from the Press of A.C., and many other accolades from regional print publications, television and radio for his concept and menu.
Earlier in his career Frank worked mostly in New York City finer dining including time as the General Manager and Wine Buyer at “No. 18” in Manhattan, featured on the Food Network’s “Dining Around” where Frank worked closely with Chef Dale Balsamo formerly a protégé of David Bouley at Montrachet. There Frank’s thoughtful wine list received an “A-Plus” from the renowned wine guru Kevin Zraly and his list of original martinis was included in Ray Foley’s “Ultimate Little Martini Book.”
During his New York City tenure Frank partnered and trained with Chef Larry Berson of the New York Times 4-starred “The Carriage House” in Manhattan to launch “Contemporary Caterers,” offering eclectic, quality catering services. Their client list included members of the German, Italian and Argentinean consulates, VOGUE Magazine and many other organizations in the fashion, production and financial industries. Frank also has consulted for a number of New York City restaurants and lounges as Chef, Wine Buyer, FOH Staffing & Training as well as Financial Counseling and Openings.
